For the Chicken Marinade
1 kg chicken breast, cut into thin strips
Salt
Black pepper
Red pepper
A pinch of turmeric
A pinch of ginger
1 teaspoon red pepper paste
¼ teaspoon tomato paste
1 tablespoon yogurt (for tenderness)
½ teaspoon garlic powder
1 finely chopped green bell pepper
1 finely chopped red bell pepper
Marinating time: 1 hour in the fridge
For the Pizza Sauce
1 chopped onion
A little oil
1 tomato
1 green bell pepper
Oregano (a generous amount)
Once the vegetables are cooked, blend them until smooth.
For Assembling
Tortilla bread
Mozzarella or any melting cheese
Mix all the marinade ingredients together, then let the chicken rest in the fridge for 1 hour.
Cook the marinated chicken in a pan until fully cooked.
To prepare the pizza sauce:
Sauté the onion in a little oil until soft.
Add the tomato and green pepper and cook until fully softened.
Add plenty of oregano.
Blend the mixture until smooth.
Spread a layer of pizza sauce over a tortilla, add chicken, then cheese.
Roll it tightly and arrange the rolls in a baking dish.
Add extra cheese on top if desired.
Bake at 180–190°C until the cheese melts and the top is lightly browned.
