Layali Lubnan is one of the most famous Middle Eastern desserts known for its soft creamy texture made from milk sugar and orange blossom water topped with a rich layer of cream and syrup. It is often garnished with nuts such as pistachios which add both flavor and elegance.
It is typically served chilled as a refreshing dessert after meals or alongside coffee and tea and is considered a luxurious sweet that beautifully blends simplicity with rich flavor.
Base Layer
5 cups milk
1 cup fine semolina
½ cup sugar
1 tbsp orange blossom water
Homemade Ashta (Cream)
1 liter milk
2 tbsp yogurt
Juice of ¼ lemon
1 can ready-made cream (optional but recommended)
Topping
Ground pistachios
Semolina Layer
Place milk, semolina, and sugar in a pot over medium heat.
Stir continuously until it starts boiling.
Add orange blossom water.
Keep stirring until it thickens, then pour into a tray and let it cool slightly.
Homemade Ashta
Bring the milk to a boil.
Add yogurt and lemon juice while stirring.
The milk will separate, forming curds and whey.
Strain the curds (ashta) and set aside.
Mix with a can of cream for a richer texture.
Assembly
Spread the ashta over the semolina layer.
Sprinkle pistachios on top.
Refrigerate for 2–3 hours before serving.
