Base Amount
1 kg chicken breast
(Divided into two portions: plain & spicy)
Plain Mortadella
500 g chicken breast, diced
1 tsp salt
1/2 tsp paprika
1 tsp white pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 cup cornstarch
1/2 cup water
Crushed black peppercorns for the outer layer (optional)
Spicy Mortadella
500 g chicken breast
Same spices as the plain version
Plus: 1 heaping tsp paprika
1/2 tbsp pepper paste (red pepper paste)
Crushed red pepper for the outer layer (optional)
Blend the chicken in a food processor until smooth and paste-like.
Add all spices, cornstarch, and water, and blend again until fully combined.
Lay out plastic wrap and sprinkle black pepper or red pepper depending on the type.
Shape the mixture into a log and wrap tightly in the plastic wrap.
Wrap again in aluminum foil to secure it.
Steam the roll over boiling water for 1 hour 15 minutes to 1 hour 30 minutes.
Refrigerate for 6 hours or overnight.
Slice and enjoy — clean, homemade, and better than store-bought.
